Oven Temperature Converter

Turn any oven temperature into Fahrenheit, Celsius, Fan/Convection, or Gas Mark in one glance — the same reference I use whenever I’m testing a recipe from a UK or European source against my own US oven.

350°F
177°C
Gas Mark 4 — standard moderate oven.
Home oven dials round to the nearest 5-10°, so exact decimal precision won’t change your bake.

165°F (74°C) isn’t a standard oven-dial setting — it’s most often searched as a food-safety internal temperature, such as for cooked poultry, rather than a baking temperature.

Fan (Convection) Oven Conversion Chart

Most recipes are written for a conventional oven. If yours is a fan/convection oven, use this column instead — no separate math needed.

Conventional (°F)Conventional (°C)Fan (°C)Gas Mark

325°F160°C140°C3

400°F200°C180°C6
425°F220°C200°C7

The standard adjustment is roughly 20°C lower for fan ovens. Always check your oven manufacturer’s manual, since the exact offset can vary slightly by model.

Why It Matters

Why oven temperatures don’t line up perfectly

Fahrenheit, Celsius, and Gas Mark weren’t designed to convert into neat round numbers, which is why 350°F becomes an “ugly” 176.6°C in the raw math. In practice, home ovens aren’t precise enough to notice a few degrees either way, so recipes — and this converter — round to the nearest number your oven dial actually has: 180°C rather than 177°C, for example. Gas Mark adds a third layer, since it was built for older UK gas ovens and only shifts in fixed steps, roughly every 25°F.

If you’re converting a recipe from a Fahrenheit source to a Celsius oven — or the reverse — this small rounding is normal and won’t affect how your bake turns out.

Fan Ovens

Conventional vs. fan (convection) oven temperatures

Fan ovens use a built-in fan to circulate hot air, which cooks food faster and more evenly than a conventional oven relying on still heat. Because of that, a recipe written for a conventional oven needs to run about 20°C (roughly 20°F) cooler when baked in a fan oven — otherwise the outside browns before the inside finishes. UK recipes often list both temperatures side by side for exactly this reason; US recipes usually don’t distinguish, since fan settings are less common on American home ovens.

If your oven only has a fan setting and the recipe doesn’t specify, use the fan column in the chart above rather than the conventional Fahrenheit or Celsius number.

Get It Right

Getting an accurate bake, not just an accurate number

01

Convection (fan) ovens circulate air and bake faster — lower the converted temperature by about 20°F (10-20°C), or follow your oven manufacturer’s guidance.

02

Home oven dials drift over time. An inexpensive oven thermometer is the only way to know your oven’s real internal temperature, not just its setting.

03

Always preheat fully before baking — opening a cold oven partway through preheating resets the cycle and throws off your bake time.

04

Position matters as much as temperature: the center rack gives the most even heat for cakes, cookies, and muffins.

Frequently Asked

Oven temperature conversion: common questions

What is 350°F in Celsius?

350°F converts to approximately 177°C, commonly rounded to 180°C on most oven dials. This is the most common baking temperature for cakes, cookies, and quick breads.

What is 165 Fahrenheit in Celsius?

165°F converts to approximately 74°C. This isn’t a common oven-dial setting — it usually comes up as a food safety temperature, such as the internal temperature the USDA recommends for cooked poultry, rather than a baking temperature.

How do I convert a recipe temperature for a fan (convection) oven?

Lower the stated temperature by about 20°F, or roughly 20°C to 10°C depending on the source, since fan ovens circulate hot air and cook faster and more evenly. So a recipe written for 400°F (200°C) in a conventional oven runs at about 180°C fan. Many UK recipes list both the conventional and fan temperature for this reason.

What is 425°F in a fan oven?

425°F (220°C conventional) converts to approximately 200°C in a fan oven. Always check your specific oven manufacturer’s guidance, since the exact adjustment can vary slightly by model.

What is 400°F in Celsius for a fan oven?

400°F is 200°C in a conventional oven, which converts to approximately 180°C in a fan oven. This roughly 20-degree reduction is the standard adjustment for convection baking.

How do I convert Fahrenheit to Celsius for baking?

Subtract 32 from the Fahrenheit temperature, then multiply the result by 5/9. For everyday baking, most home ovens round to the nearest 5 or 10 degrees, so exact precision to the decimal point isn’t necessary.

What is a Gas Mark and how does it relate to Fahrenheit and Celsius?

Gas Mark is a temperature scale used on UK and some European gas ovens. Gas Mark 4 equals roughly 350°F or 180°C, which is why it’s considered a standard moderate oven setting across all three scales.

Why does my oven run hotter or cooler than the dial says?

Most home ovens drift from their dial setting over time due to worn thermostats or calibration issues. An inexpensive oven thermometer placed inside the oven is the most reliable way to confirm the actual internal temperature.

What is 180°C in Fahrenheit?

180°C converts to 356°F, which most recipes and oven dials round to 350°F. It’s the single most common moderate-oven setting across US, UK, and European recipes alike.
