Method
- Preheat oven to 350°F (175°C). Line or grease muffin tray.
- Mash bananas in a bowl until smooth.
- Mix in butter, brown sugar, egg, and vanilla.
- In a separate bowl, combine flour, baking soda, baking powder, and salt.
- Add dry ingredients into wet mixture and stir just until combined.
- Toss caramel pieces in a little flour, then fold into batter with pecans.
- Divide batter evenly into 12 muffin cups.
- Bake for 20–22 minutes or until a toothpick comes out clean.
- Cool slightly before serving.
