Cinnamon Bun Bites

Cinnamon Bun Bites are soft, bite-sized treats made from enriched yeast dough, coated in cinnamon sugar, and baked until golden. They deliver all the cozy flavor of classic cinnamon rolls in a quicker, easier form. Finished with a sweet vanilla icing, they are perfect for breakfast, snacks, or dessert.

Ingredients
  

For the Dough
  • 1 1/4 cups whole milk
  • 4 tablespoons unsalted butter
  • 2 1/4 teaspoons instant yeast
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons fine sea salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 3/4 cups bread flour
For Dipping
  • 1/2 cup unsalted butter melted
  • 3/4 cup light brown sugar
  • 2 tablespoons ground cinnamon
  • 1/8 teaspoon fine sea salt
For the Icing
  • 2 cups powdered sugar
  • 1/4 cup whole milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Method
 

  1. Warm milk and butter until butter melts, then let it cool slightly.
  2. Mix milk mixture with yeast, sugar, salt, eggs, and vanilla. Add flour gradually and knead until smooth and elastic.
  3. Let dough rise in a greased bowl until doubled in size (1.5–2 hours).
  4. Melt butter for dipping and mix cinnamon, brown sugar, and salt in a separate bowl.
  5. Punch down dough and roll into 1-inch balls (about 85–90 pieces).
  6. Dip each ball in melted butter, then coat in cinnamon sugar. Place in a greased baking pan.
  7. Let rise again for about 30 minutes until puffy.
  8. Bake at 350°F (175°C) for about 30 minutes until lightly golden.
  9. Whisk icing ingredients until smooth.
  10. Drizzle over warm bites and serve.

Notes

  • Best served warm for soft texture
  • Bread flour gives best fluffy structure
  • Do not overbake for soft bites
