Guinness Brownies

These Guinness brownies are rich, fudgy, and intensely chocolatey with a deep, bold flavor enhanced by Guinness stout. The beer doesn’t taste strong instead, it elevates the cocoa and gives the brownies a smooth, complex richness that makes them extra special.

Ingredients
  

Brownies
  • ¼ cup vegetable oil 60ml
  • ¾ cup Guinness stout beer
  • 2 cups sugar 414g
  • ½ tsp espresso powder optional
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • ¼ cup unsalted butter melted (56g)
  • 2 large eggs
  • 1 cup all-purpose flour 130g
  • cup Dutch-processed cocoa powder 76g
Chocolate Topping
  • 5 oz semi-sweet chocolate chips about ⅔ cup
  • 2 tbsp unsalted butter
  • 2 tbsp Guinness stout beer
  • ¼ cup powdered sugar 29g

Method
 

  1. Preheat oven to 350°F (180°C). Line a 9×9 pan with parchment paper.
  2. Whisk oil, Guinness, sugar, espresso powder, vanilla, and salt until combined.
  3. Add melted butter and mix well.
  4. Whisk in eggs until smooth.
  5. Add flour and cocoa powder and mix just until combined.
  6. Pour into pan and spread evenly.
  7. Bake for 30–35 minutes until a toothpick shows moist crumbs. Cool completely.
  8. Melt chocolate chips, butter, and Guinness together until smooth.
  9. Stir in powdered sugar to make ganache.
  10. Spread topping over cooled brownies. Let set, then slice.

Notes

For the best Guinness brownies, avoid overbaking because that’s the key to keeping them fudgy and soft in the center. Always check them a few minutes before the suggested baking time—when a toothpick comes out with a few moist crumbs, they are ready.
Make sure to let the brownies cool completely before adding the chocolate topping; otherwise, the ganache will melt and lose its smooth, glossy finish. For even better flavor, allow the brownies to rest for a few hours or overnight so the chocolate and Guinness can fully deepen and blend together.
You can also chill them slightly before slicing to get clean, sharp edges for a more bakery-style look.
