Lemon Bars

Lemon Bars are a refreshing dessert made with a buttery shortbread crust and a smooth, tangy lemon filling. They offer the perfect balance of sweet and citrus flavors with a soft yet firm texture. Ingredients
  

For the Crust
  • 300 g 2 1/2 cups all-purpose flour
  • 66 g 2/3 cup powdered sugar
  • 1/2 tsp salt
  • 170 g 12 tbsp unsalted butter, melted
For the Lemon Filling
  • 360 g 3 cups sugar
  • 8 large eggs room temperature
  • 240 ml 1 cup fresh lemon juice
  • 3 tbsp lemon zest
  • 60 g 1/2 cup all-purpose flour
For Finishing
  • Powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x13 baking pan with parchment paper.
  2. Mix flour, powdered sugar, and salt, then add melted butter and combine. Press into pan and bake until lightly golden.
  3. Rub lemon zest into sugar, then whisk with flour, eggs, and lemon juice until smooth.
  4. Pour filling over warm crust and bake until set, rotating halfway through.
  5. Cool at room temperature, then chill for at least 3 hours.
  6. Dust with powdered sugar and cut into squares using a sharp knife.

Notes

  • Always use fresh lemon juice for best flavor
  • Chill completely for clean slices
  • Do not overbake for smooth texture
