Peanut Butter Chocolate Chip Cookies

Ingredients
  

  • 2 1/2 cups 318g all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp fine sea salt
  • 1 stick 113g unsalted butter, melted
  • 3/4 cup 202g creamy peanut butter
  • 1/2 cup 100g granulated sugar
  • 1 cup 200g packed dark brown sugar
  • 2 large eggs room temperature
  • 1 egg yolk room temperature
  • 2 tsp vanilla extract
Mix-ins
  • 2 cups 340g semisweet chocolate chips (plus extra for topping)

Method
 

  1. Prepare dry ingredients
  2. Preheat oven to 350ºF (175ºC). In a bowl, whisk flour, baking soda, baking powder, and salt.
  3. Make dough
  4. Mix melted butter and peanut butter until smooth. Add sugars and mix well. Beat in eggs, egg yolk, and vanilla. Gradually add dry ingredients and mix until just combined. Fold in chocolate chips.
  5. Chill dough (optional but recommended)
  6. Cover and chill dough for 1–24 hours for best flavor and texture.
  7. Shape cookies
  8. Scoop dough into large balls, flatten slightly, and place on baking sheet. Add extra chocolate chips on top if desired.
  9. Bake
  10. Bake for 12 minutes or until edges are golden. Centers should look slightly soft.
  11. Cool & serve
  12. Let rest for 5 minutes on tray, then transfer to rack to cool completely.

Notes

Chilling improves texture and flavor. Do not overbake for soft and chewy cookies. Add milk if dough feels too crumbly.
