Ingredients
  

  • 318 g 2½ cups all-purpose flour
  • 2 tsp baking powder
  • ¾ tsp fine sea salt
  • 226 g 2 sticks unsalted butter, room temperature
  • 250 g 1¼ cups granulated sugar
  • 1 large egg + 1 egg yolk
  • 1 tsp vanilla extract
For Rolling
  • 50 g ¼ cup granulated sugar

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Beat butter and sugar until light and fluffy.
  4. Add egg, egg yolk, and vanilla; mix until smooth.
  5. Add dry ingredients and mix until dough forms.
  6. Shape into balls, roll in sugar, and slightly flatten.
  7. Bake for 10–12 minutes until edges are lightly golden.
  8. Cool on tray for 5 minutes, then transfer to wire rack.

  • Do not overmix dough for soft cookies
