Ingredients
  

  • 2 cups chopped pecans toasted
  • 1 1/2 cups self-rising flour
  • 1 cup brown sugar packed
  • 1 cup white granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish. In a large bowl, mix brown sugar, white sugar, oil, and eggs until smooth. Stir in vanilla extract.
  2. Add self-rising flour and salt, mixing until just combined. Do not overmix.
  3. Fold in toasted pecans until evenly distributed.
  4. Pour batter into prepared dish and spread evenly. Bake for 30–35 minutes until golden brown and a toothpick comes out clean.
  5. Let cool for 10 minutes before cutting into squares. Serve as is or with vanilla ice cream.

Notes

Toasting pecans enhances flavor. Do not overmix to keep the bread soft. Store in an airtight container for best freshness.
