Ingredients
  

  • cup light corn syrup
  • 5 tbsp unsalted butter softened
  • tsp mint extract
  • ½ tsp salt
  • Green gel food coloring as needed
  • 4 to 5 cups powdered sugar
  • 10 oz chocolate candy coating melting wafers / almond bark / Candiquik

Method
 

  1. Add powdered sugar gradually until dough forms.
  2. Knead until dough is soft but not sticky.
  3. Roll between parchment and chill for 60–90 minutes.
  4. Cut into rounds or shape into patties.
  5. Melt chocolate coating until smooth.
  6. Dip patties in chocolate and place on parchment paper.
  7. Let set completely until chocolate is firm.

Notes

For the best chocolate mint patties, make sure to add the powdered sugar gradually so you can control the texture of the dough. The mixture should be soft, smooth, and easy to handle without sticking to your hands. If it feels too sticky, add a little more powdered sugar; if it feels too dry, a small amount of corn syrup can help fix the consistency.
Chilling the dough is very important because it helps the patties hold their shape when cutting and dipping. Also, melt the chocolate slowly and gently to avoid burning or thickening, so you get a smooth, glossy coating.
